I'm curious to find out the length of time that home-canned food is still safe to eat. I've eaten things that I've personally canned that were three years old and they were fine. If it pops when you open it and it smells and looks good, eat it. I wonder if the "one year" time period is just a...
I have about a dozen sweet banana pepper plants that are heavy with peppers. Does anyone have a good recipe for canning a nice sweet banana pepper jelly they would like to share so I can use all those sweet peppers? I prefer no chilis or spicy hot ingredients, and I would like to can the jelly...
Here is the recipe I have been using for two years. My family is crazy about my snap beans. When I use my pressure canner, I have the heat on high after the jiggler is on, and until the pressure reaches 11 pounds. At THAT point, I cut the heat down some. Unfortunately, with a dial gauge pressure...
I had two of them and recycled both of them after I cut my knuckle. I think they work well if the vegetable is just the right firmness. Trouble is, veggies vary so much in firmness, I prefer to use a very sharp chef's knife. Still have to be very careful washing it or I could lose a finger.
I canned snap beans yesterday and it was 93 here in Virginia. You're right about the AC non-stop. I think next time I'll close off the kitchen and open two windows. One for the fan to blow out, and the other for fresh air to come in. At least that will reduce the humidity. That will keep flies...
Very nice looking garden! I think I would run some string for the peas up and down on the twine you have up already. I don't plant many peas, but that would give them something to get from one level to the next. Other readers, is that correct for peas? You know, like for pole beans.
I have heritage raspberries. I started with five plants last year. This year there are twenty two. Although small plants, the roots are doing well.
Ripeness: Even though they are "red" raspberries, if they are red they are not ripe to my liking. I like when they become more of a burgundy and...
I've been blogging about my organic garden in the city for just over a year now. I've learned a lot from others, and I hope others have learned from me. The Easy Garden and Sufficient Self sites are the two best forums that I have been fortunate enough to find. So much information is shared...
I too, like the big leaves and I live in Portsmouth, Virginia. Last year I set out my collard seedlings on August 21st. Even after harvesting 12.3 pounds, I let them stay in the ground through the winter so I would have an early spring crop. It worked. Even though we had a hard winter, I got...
Has anyone ever grown Chuck Hayes gardenias from seed? I had a seed pod last year and I saved the seeds and planted them in starter pots. Ten have come up, but I'm still waiting on the other twenty. Do you keep them in direct sunlight or not? I have heard both ways.
I had three plants that organically produced a total of 276 sweet banana peppers that weighed 16.59 pounds.
This year I have twelve plants, and I'm going to pick 4 peppers tomorrow. They are a tough plant in my experience.
Well if it's not blight, that's good for me. I think I'll take some pictures of them to the cooperative extension and see what they say. An old timer I worked with said it was blight for sure. I was only sharing what I was told, but I'm going to find out for sure from the extension.
