Currently dealing with this, but thankful that I have plenty of backups. Learned my lesson years ago when an 80-degree day turned into a freeze the next morning.
Oh yes, I have mint all over for this very reason! My favorite way is to make lemon ginger syrup and drink the tea chilled (sometimes with a bit of dark rum 😎).
I let mine spread as a ground cover in my herb beds, every spring I dig up the clumps I don't want and that seems to maintain it well enough. Now mint, woof....I use it as ground cover as well, but there's no real maintaining except trimming.
