Okay I think I will just start out with a couple seeds and see if anything grows from them. I will only need one plant then. I'm worried it will turn mushy if I freeze it.

This will be my first time planting eggplant too. Does anyone know if you can freeze eggplant or not?

I dug up the whole plant and they made it just fine. If yours is flowering right now I would wait until it's done flowering and setting fruit to move it. That way your not stressing it more by trying to set fruit after it's been moved.

I transplanted mine last July and they are doing just great now. They all survived and are looking huge this year! With lots of flowers on them. Yummy, I can't wait!

Ok, thanks for your help. Should I roast cut in halfs or cut up in small chunks? Just looking for the easiest way to get it done. Also, how long should I roast it for? 350 degrees?

Does anyone know how to go about freezing the squash? Should I peel then cut up small and boil it first ( guess I should say blanch it first)? I just tried this squash for the first time and was thinking of planting a few in the garden this year.
