It's getting to be that time of year so here goes :D

1. Shred the zucchini and bag and freeze in 2 cup portions for cake and bread recipes (most call for 2 cups of shredded zucchini. Drain well before using.)
2. Make it in to a healthy, low carb pizza crust ( http://cleochatra.blogspot.com/2009/05/zucchini-pizza-crust-recipe.html )
3. Shred and freeze for duck feed. Frozen zucchini put in a bowl of hot water makes a great treat when they can't graze.
4. Donate to soup kitchens or food pantries
5. Place in a Walmart bags and randomly hang the bags on neighbor's doors

I really appreciate DW making zucchini bread and freezing it. She does the same thing with carrot bread in the spring when the carrots just aren't going to last any longer in storage.

Timing the bread baking for zucchini is a little tricky. We really try not to do much baking during hot weather.

Of course, the compost pile is happy to accept any offerings. And, the chickens really seem to enjoy the zucchini that has gotten past its prime. In fact, the laying hens are delighted with zucchini bread (or, carrot bread) if we are running out of enthusiasm for it during the winter.

The recipe of choice is real simple so it is not as tho' very expensive ingredients are going to the chickens. Probably, pretty darn nutritious for them too :)!

I have no problem with excess zuchini, or anything else edible. I'm about the only one left in my neighborhood who isn't either Mexican or of Mexican heritage and every one of them are more than happy to have anything I can give them. Unlike a lot of other Americans they know exactly what to do with any vegetable to come up with something delicious.

They still cook from scratch! I have a sister who is 10 years younger than me. If it wasn't for chinese takeout she would have starved to death years ago. She can burn water!

I made zucchini brownies (my husband looked at it while I was mixing it together and made faces like a two year old taking medicine), and a veggie dip that has zucchini in it. I haven't tried the brownies yet but the veggie dip is very good.

Grilled zucchini! Make lengthwise slices, season, spray with Pam, grill. Adobo and paprika are good for seasoning, or Italian herbs with some parmesan....

My sister makes macaroni and cheese, except no macaroni--use gently simmered/drained zuchini or squash instead.

I like to cut it up and simmer with chicken bullion, garlic powder and diced onion. Drain and top with shredded cheddar while still hot so it melts.

Cooked same as above, drained and added to an omelet. Makes a pretty omelet.

Summer squash casserole. Mmmm..mmm!

Always good to toss in with mixed roasted veggies. In glass casserole dish put all your seasonal garden veggies, a couple pats of butter and sprinkle with a little creole seasoning, cover with foil and bake about an hour at 400 degrees.

I like it as a pizza topping too.

The DH *loves* zucchini sauteed in olive oil, garlic salt, pepper, and french tarragon! I've served it a few times, and you either absolutely LOVE it or don't like it at all. Too bad I haven't been able to find any french tarragon for the last two years!!
