Berries, Goat Cheese and Cream

I made a lovely dessert last night because I hit the grocery store and they had large angel food cakes on sale for $3. So I had 4 lb of blackberries, 12 lbs of blueberries and 2 lbs of strawberries in the fridge. I cooked down 2 cups of each until all the juice was bubbling in the pot.

I strained out the berries and put those in the fridge to chill, then added 1/3 cup sugar and 1/3 cup red wine. I cooked this down by 1/2 into a syrup.

In the food processor I mixed 6 oz cold goat cheese and 3/4 cup of whipping cream with 1/2 cup powdered sugar and 1 tsp vanilla. Put in the fridge to chill too,

When the syrup was ready I let it sit and thicken to room temp.

I served this after dinner on the deck with glasses of wine for the company. Berries and syrup over a slice of angel food cake and then topped with the whipped goat cheese topping!!! Mmmmm

Oh vfem, that sounds amazing!! :drool I'm guessing fresh berries from the garden right. It sounds so good i must make some.

The strawberries are mine, the blackberries were from a neighbor, the blueberries are from a pick your own outside of town. Even the wine was from a local winery.

Not a bad dessert to entice our friends to come over and help pick with us and plant when needed. :lol:

That looks and sounds wonderful! If you have never made an angel food cake from scratch- I highly recommend it. I had never done it and DD requested it for her bday. It was a little like a science experiment (compared to regular baking), but my goodness it was so tasty and beautiful. Decorated with borage flowers, I was quite proud of myself! Wonder how it would be with duck eggs???

Gosh Vfem...how I wished I lived close to you and was one of your close friends! ;) Darn...just reading it made my mouth water...and then I saw the picture...with a glass of wine and good friends...what more could you want? ;)
