Canning Nightmare

Great job Mary giving it a go! I do think that the first canning experience is a little stressful. I do think that you can find shortcuts and tricks that work in your kitchen to make things easier for you. Your apple pies are going to be wonderful! To answer you sealing question. In my experience, you jars should be sealed in 12 hours. If they are not at that point, reseal.
 
Thanks Stubborn..it's wierd but yesterday evening I had only 1 jar that didn't seal. There were initially 3 but 2 sealed later on. Well this morning one of the 2 that sealed was popping again. So I will reseal 2 jars.

I'm having trouble finding asian pear canning recipes. Can I use my apple pie filling that included lemon juice? Hope someone can answer this question.

I plan to do some canning by myself this afternoon. Instead of filling one jar at a time and closing can I line up my 7 jars and fill them up one at a time and then wipe all of them and seal? I will be peeling one asian pear at a time and don't want my fruit to get dark. I do have some Ball Fruit Fresh. I didn't use it for my apples and I don't know how much to use for the asian pears. I suppose I could just cut a big bowl full and sprinkle, stir and then fill the jars?

Mary, sounds like you are on your way! When I can I set up my own assembly line. I peel, core, etc and put the apples into a bowl of water with some lemon juice so they don't brown. When I'm ready to fill the jars, I do as you were thinking - line them all up fill, wipe and seal.

You'll get your own routine soon enough. When you have help split the tasks - one peels and another cooks; one fills and the other wipes and seals.

I have never used Asian pears but hope to plant a couple trees in the next few years so I have some. I love them for eating.

Steve, is that T for teaspoon or tablespoon? It sounds like to much lemon juice if it's a tablespoon. I only added 3 tablespoon for 7 quart jars of apples. According to this recipie I would use 14 tablespoons!?

Normally, you add lemon juice to the individual jar. 1Tablespoon for pint, and 2 Tablespoon for quart.
