You didn't mention freezing it in your list. Do you? We have tried that (with the freezing step) and we have experienced some off flavors. I wonder what we may have done wrong.

Yes I freeze it. After blanching I line cookie trays with wax paper, place the corn cobs on the trays, put it in the freezer until it starts to freeze, then vaccuum seal. The "prefreezing" keeps from sucking water/juice from getting pulled into the vacuum sealer. We have never noticed any off taste. I don't know if we are just lucky or if we just don't taste it. It always tastes delicious to us.
