Can I compost them? I mean I KNOW that I can but how long will they take and will they make the pile way to hard to turn. I guess I should not look organinc matter in the mouth. I did take all the leaves off of them and use them as mulch in my beds.

Cut the stalks into pieces! I'm going to do that to mine, so they are only like 12" long max. :D

The stalks are high in carbon and low in nitrogen, so they will take a while. I agree with Vfem's suggestion to cut them up, the smaller the better. That will make it easier to turn. It will also help a lot to add additional nitrogen to your compost heap.
