Before I served that to guests I'd be tempted to make it for myself. If you have extras it would probably freeze really well. The reason I'd try it before is to make sure the cooking times are about right. I'd want to make sure the winter squash would be cooked well without drying out when it is upright like that. I know, covered with foil it should stay moist but I've tried new dishes for guests and they don't always turn out exactly like they should. I'd be less worried about the summer squash cooking.

I'd like to see how long it really needs to cook uncovered too so it browns right. Presentation is important, you don't want to overcook the crab topping and turn it too crisp or burn it. Different ovens can cook differently. I'd just like a trial run.

That should be delicious. And rich. Can you imagine pulling that out of the freezer and heating it up when you've had one of those days and need an easy supper?

if there was any leftovers would put into the freezer, once needed would thaw it out, run it through the blender quickly add a little heavy cream combine and heat for a rich cream soup ,oh add a pinch of grated cheese on top .... served with some toasted buttered sourdough bread...

culinary mind at work....... :drool
