Dried Tomatoes -- Now What???

I just dried a large batch of Roma Tomatoes in my dehydrator.

In the past, I have placed them in small jars, covered them with olive oil and kept them in the refrigerator (up to a year).

Is this the best way? What are some other options??
Does anyone use vacuum packers? How does this work and do you like it?

Hi Cindy! I did the same thing this year. Can't believe what a flavor jolt they are! I was unsure exactly how to store them- someone on this forum recommended freezing them. I did that, and it works fine...Not sure how long they would last in freezer, but I don't have such a surplus, that they won't be gone soon. Enjoy!!

I keep mine in a ziploc-type bag on the spice shelf. Of course, like Lesa, mine are gone pretty quickly, say within three months.

A vacuum packer would not work for me. When I use them, I only use a few at a time, so I need something I can reseal.

I just put mine dried in Mason jars. Even though I LOOOOOVE tomatoes, I can't stand dried ones - they taste like raisins to me. :sick I plan on giving them out as Christmas presents.
