I found this recipe in the latest Vegetarian Times magazine (though I'm not a vegetarian, I only eat meat a few times a week)

2 lbs fresh figs, trimmed and quartered
1.5 cup sugar
12 oz dried figs, trimmed and sliced
3 tbs. lemon juice
1 tbs. grated lemon zest

Combine all ingredients, and bring to boil, simmer 1 minute. Remove from heat, cover and cool overnight

Stir jam and bring to boil, reduce heat and cook 25-30 minutes.

Process in water bath with 1/4 headspace for 10 minutes.

Makes 5 eight-ounce jars.

I'm going to try this recipe this weekend! (I hope I'm not breaking any copyright laws by posting this)

YUM!! I love figs, especailly fig pudding.

Robb - I love figs too! I was in Philly in November and had a white pizza with lovely cheeses and fig jam dabbed on top and it was the BEST! Gonna try to recreate that!

I have a recipie for Strawberry jam when the figs are great and the strawberries are in short supply. My family can't tell the difference,neither can I. We live in Az. Too hot for most strawberries,great for figs!!!:cool:

Strawberry-Fig Jam

3 C. Figs
3 C. Sugar
1 Large pkg. strawberry jello
soda water
paraffin of canning lids

Soak figs in hot soda water to cover for 15 min. Peel and mash. Bring to a ful boil and boil for 20 min. stirring often to prevent scorching. pour into
sterile jars and cover with paraffin or canning lids.
