help - rose water for baking???

HI,

I have a bunch of recipes I really want to try, but many call for rose water. I've never seen it for sale anywhere. I Googled it, but it seems to be used mostly as a cosmetic, and I'm not sure how the edible variety differs.

Does anyone know about rose water? HOw to make it (not that I could find roses at this time of year!), how to find it, or whether there's a substitute for it in baking?

Any info would be appreciated! Thanks

If you are in NY you can probably find some in a large grocery store (in a large city) -- baking aisle -- or also in an Indian food market. Good luck!

Edited to add -- I would only use the food grade version. The beauty type may work, but could have impurities if it is extracted chemically (as opposed to distilled).
