I have been wanting to try this for some time, but it sounded so difficult. Today, I decided "What the heck, I'll only waste a cup of oil and an egg" The difficult part was trying to get my stick blender to even work in such a small amount of egg yolk, but it became mayo in spite of that. I ended up making something like Miracle Whip, which is what we like for sandwiches, etc. I used one egg yolk at room temp, about 1.5 tablespoons of lemon juice, about a teaspoon of water, about 2/3 cup of peanut oil, then salt, pepper, sugar, paprika and ground red pepper to taste. Pretty good, and only took about a minute to turn into mayo, once I got the blender to work. They say the trick is to put the oil in a tiny bit at a time, like a couple drops, at first. After you get a little in and mixed up, you can pour it in faster. You know what would be yummy? Bacon mayo! :drool
