How many dug it up today? I dug and cleaned them. DW ground them up. One batch with beets and mine straight with vinegar.

Holy Smoke, Seedcorn!

Heavens to Betsey!

I think that would probably wrech, wrep, wreh, who-haw . . . hrrmmm . . . wreck havoc with my stomach!

Steve

Edited: Oh, you probably didn't mean you ate that! You just made a condiment in attractive jars in which someone might dip one of those 1/4-sized spoons in and show that to a piece of grilled steak. ;)

How does it taste this time of year? I thought you harvested in the fall, after a frost? Is it strong?

No, I don't eat it by itself. Since I live on a sand/gravel hill, it is not as hot when grown in good black gumbo. Grown in black dirt, it will light you up. It's mellow grown in sand, and sweeter. That is sweet for horseradish.

My folks told me dig in any month with an R in it.

Nice thing about spring dig is that you replant the tops and have more by fall.
