How do you make Sauerkraut? UPDATE..ITS WORKING

My parents used to make tons of sauerkraut in 55 gallon barrels. My dad says if you've started attracting hordes of flies then the kraut is doing A-Ok.

Could you tell us more about the 55 gal barrels? Plastic? Did they use the sauerkraut as needed and recover the barrel? Meaning, did they store the kraut all winter in these barrels instead of putting in jars?

Also, were these fruit flies or common big house flies and what did they do to keep them out?

I'm not sure, because it was before I was born, but I'm guessing plastic?
I know they canned it after it was fermented.

My parents did a lot of canning and winemaking. My dad was a science teacher and he had one of his highschool senior classes make wine! It was the 70's.

No I don't think you were supposed to weight it down with anything. I'll ask my wife when she gets home and try to find the recipe if I can.
