The olive trees put out a lot of tender new growth during their time indoors during the winter. So, this time of year I begin to give them a light pruning, avoiding any branches that have blossoms of course. We use the trimmed olives for olive leaf tea, which has any number of health benefits.

about how many leaves does it take to make a cup of tea?
After they are dried I crush them and remove the stems. We use the same amount of crushed leaves as you would use for regular tea, so it is hard to give the exact number of leaves. With twenty plus trees I will have lots of leaves though.
 
Cool. That sounds like a lot of fun and very rewarding.
