Is it soup time at your house?

Like to talk about a favorite from-your-garden soup?

Yummy! How funny, I have a pot of chicken/vegetable on the stove for dinner tonight! Onion, garlic, carrots, potatoes and spices from the garden. Are you using the celeriac leaves?? Can the celeriac stand frost- or should I harvest mine tonight? Would love to know your recipe for that potato soup...

Oh no, Lesa! That is a by-gosh-&-by-golly soup.

The picture is from a couple years ago & might have been posted on here once before. I just put a sprig of cilantro on it for photogenic purposes ;).

Bacon fried with the onions, potatoes boiled with the celery root (start with the potatoes first, celeriac won't require as many minutes). Drain. Ladle all ingredients into same pot, splash in the half&half and dash with Mrs. Dash & black pepper. Of course, it is better after spending a night in the fridge . . :)

I've never allowed my celery root to experience a hard frost. I think those kind of temperatures would be unwise.

Oh yum! I love potato soup, and I've never had it with celeriac but I might have to try growing some next year.
What sort of flavor does the celeriac add?

Around here it's well liked with bacon, half & half and a generous amount of cheddar tossed in before serving. Sometimes I give it a shake of cayenne and sometimes chili powder. Definitely one of my favorites. :)

I also like to make minestrone and throw in veggies I've stashed in the freezer from the garden. It's never the same twice, usually delicious, but at the worst, edible!

This year I have a lot of dried peas ( didn't grow them with that intention, sort of got behind in garden duties :p ) that I'm going to experiment with.

"They" say, that you burn more calories chewing and digesting a stalk of celery that you gain by eating it.

Celeriac doesn't have that problem, calories per cup:

Celery, 16 kcal
Celeriac, 66 kcal

It doesn't quite measure up to the calories in the same size cup of chopped potato (116 kcal) but even if you have never eaten celery root, you get the idea. It is a starchy food and adds more than just flavor.

The flavor is the same as celery. In fact, the stalks and leaves of the plant are essentially celery. Celeriac is especially good mashed with potatoes and topped with a good gravy, but that's another comfort food . . :p. On this rainy day, I'm just thinking, soup.

Oh man, I want to make my potato and leek soup. I've so been looking forward to that. And I even have a couple of leeks left in the garden. YUM!!!

Yours looks fabulous too... I'm drooling! :drool

That sounds good . . . kind of like winter squash soup.

Dang! If I could grow decent sweet potatoes I'm not sure if I'd be willing to mix them with anything!
