Hello everyone!
My mom's boss is an amazing baker. I took her a pint of homemade apricot jam last week and she made vanilla cupcakes filled with apricot jam with a cream cheese apricot frosting and I must say, they were AMAZING. She then used some berry jelly I had to make berry pockets, which were also delicious. She asked me a couple of days ago if it was possible to make lemon jelly because she would love to use it as a filling. I tried searching for a recipe and didnt find much of anything. Does anyone know if this is possible, and if so, where I could find a recipe? If not, would there be something similar I could can? I appreciate it very much.
