Thanks Journey. Maybe I will give that a try this winter. All the garden produce is done for this year. The hard part is not to wonder off! I always get distracted. I.e. burn the cookies, forget to turn off oven, overfill the koi pond, etc.... thank goodness for fail safes.
Ridgerunner. It is BRAND new, so it should be o.k.

Yeah, it should be safe. But if it is a gauge type, not the rocker type, it never hurts to get them to check the gauge to make sure it is accurate.

And you mentioned you have confidence issues. Having an expert look at it can maybe help your confidence in the canner. Journey may have hit on a way to help you gain confidence in the operator. If it is the rocker type, you have another failsafe.
