We were attempting to pickle some jalapenos, but they ended up soft, which we knew was a possibility. I've heard calcium chloride mentioned as an additive to help the crispness, but I'm turning to the community for help. How can I get a crispy pickled jalapeno?

There is something called Pickle Crisp and I think that may be what it is, calcium chloride. You have my favorite pepper there but I have almost no canning experience.

This bumps up your thread, tho. Maybe those who can, have suggestions.

Best of Luck.

My wife had found that as a Ball product. I'm going to see if I can track some down today.

These peppers are the Craig's Grande Jalapeno Pepper from Baker's Creek. Wonderful producer, sweet thick walled peppers with a great familiar mild spice :). Absolutely one I'll be growing over winter.
