We have a "Beauty" and a "Mariposa" plum tree, for pollination we use the Beauty, who else uses a pollinator for their plum trees and what kind do you use?

I'm brand new to plum growing, so I used the info provided by the Dave Wilson Nursery as to which pollinators go best with which plum and for the other fruit we planted as well.

http://www.davewilson.com/ordered/marposafeed.html

According to their site, Mariposa is an Improved Satsuma and is pollinated by Catalina, Nubiana, or Santa Rosa. The standard Satsuma they list as being pollinated by Santa Rosa or Beauty. Other sites list the Beauty as a pollinator for the Mariposa, but since Dave Wilson doesn't have the Beauty in their list, perhaps that's why they don't play it up as much. We chose to purchase a Satsuma and a Santa Rosa, which is a common pairing in So. Cal. I didn't see the Mariposa when I was shopping, but that sounds delicious!
