SO today I did some spinach. My pressure canner is about 50 yrs old and not sure but I think the rubber seal may be the original....lol. Anyway, had a couple of false starts because the seal wouldn't hold. It finally did hold for the time required to do spinach. Got finished, all the pressure was released....then I was surprised to see almost half of the water from inside the jars was now OUTSIDE of the jars and part of the water I had put in to do the processing. Why did all the water come out of the jars? They all sealed just fine but the top half of my spinach has no liquid while it floats on top of what's left of the water I put in....
