Rhubarb recipes needed, please!

My rhubarb is huge, and I've never cooked with it.

I'd like to try some "baked" recipes with it at first-- if I like it, I will do other things ( preserves, etc).

Any quick and easy recipes for a rhubarb newbie ( or harder ones for later? )

Thanks!! I found that second site-- but find it hard to maneuver through-- I'll try allrecipes!!
Most of the recipes I'm seeing call for strawberries-- I know they go well together, but it's not strawberry season here yet!!! I'll see if I can find something with just the rhubarb!

Try a Strawberry Rhubarb Pie or a Rhubarb Crisp served with vanilla ice cream....:ya

I make a rhurbarb sauce that is wonderful over icecream.

These are estimates cause I am at work and dont have my book.

2 cups rhurbarb
1 cup sugar
water
cook in sauce pan until rhubarb seperates and is no longer chunky.
Add strawberry jello and pour into jars let seal. once cool enough to move I freeze these jars.

My mom makes the rhubarb sauce and we put it over angel food cake or pound cake. To die for!!!

I have a recipe for rhubarb muffins, and I make plain rhubarb (no strawberries) pie. Sounds like you have a website with tons of recipes, if you still want mine, let me know. My mom makes rhubarb chutney and jam, too, but I'd have to call her for those recipes...

By the way, you can wash and cut up your rhubarb and freeze it for later use, or you can make the pies and freeze them (unbaked). Just put a little more flour in the filling because frozen will be way "jucier" than fresh... It'll still tase just as good, but will be runnier.

I have a ton of rhubarb ready to make pies...gotta get busy!

I found this somewhere on the net and I made it this week.. really good!
I used the first sweetening option

Creamed Rhubarb Pie - Mother in law's
Dough for a 9 inch Double Crust Pie
3 cups rhubarb, sliced in pieces
1 1/2 cups sugar
3 tablespoons flour 
1/2 teaspoon nutmeg
1 tablespoon butter
2 beaten eggs
(sweetening option: 2/3 c xylitol and 1/3 c sugar or 2/3 xylitol and stevia added to taste)
Directions:
1. Line 9 inch pie pan/dish with bottom crust.

2. Place rhubarb in large bowl.

3. In a medium sized bowl, blend together the sugar, flour, nutmeg and butter.

4. Add the 2 beaten eggs to the flour mixture and combine till smooth.

5. Pour mixture over the rhubarb and stir gently.
(add strawberries if you want)
6. Place rhubarb mixture in the crust and cover with top crust.

7. Bake in a preheated 425 degree oven for 40 -50 minutes depending on your oven.
