I'm so sorry about the sweet little lambs. :( I hope that is the last of that nasty coyote!

As for the pesto, I make as much as I can and freeze it inside ice cube trays so I can store them in the freezer in a large storage bag. This way I have individual servings for use all Fall and Winter. Though I often run out by the new year. I need to plant MORE basil this year... but I only had 1 surviving plant instead of the 3-4 I usually have. Bummer!

Does the Pesto freeze ok? I was afraid it would turn all black.. but maybe the lemon juice keeps it from going dark.

I way over planted Basil this year! I have at least 40 plants! 4 or 5 different kinds.

They are all doing great! And they will keep going as long as we don't get any hard freezes. I have one plant that survived the winter and is doing well. It is sort of "woody" but still putting out new leaves. And I have three different chilies that survived the winter and and putting out new flowers.

I have a couple native chilies that are over 10 years old now!

I freeze every year and its always bright green and delicious when thawed! :D

I think it might be the oil that keeps it green.

Could be that the "green" has been pulverized out of the leaves . . .

But, I could be wrong.

Hmmm, that sounds right, the "green" is now suspended and protected by the oil.. and the lemon juice might help keep it staying green too.

In any case, it is a very nice thing to have on hand!

Last year though, I did freeze some chopped basil mixed in oil in ice cube trays to use as flavouring when sauteeing. I only used two or three of them. Prolly rancid by now. Kudos to all the Pesto Lovers here though. To have something that green and fresh looking to dine on some dreary winters night!

Rebbetzin, So sorry to hear about the loss of your neighbours' lambs. I had sheep for 10 years and never lost a live one to coyotes. They did however, dine on an old girl who died and couldn't be buried right away because of a storm.
I'm sure my doghating- badattitude (very) large pony was partially responsible for protecting the sheep. She'd chase down and stomp anything that even resembled a dog.
