I'm not sure what you mean by "goaty." What's really bad is when it has hair in it!

Goaty is that "musky" aftertaste. I have never had hair in my cheese... I use a triple layer strainer on the milk. I do of course have a stray hair fall in the milking pail from time to time, but I stop milking and get it out of the milk.
