I've just started pressure canning, and I made salsa the other day. When I opened the canner, I could hear steam leaking out of 2 of the jars. Today, when I checked the lids, they seemed sealed. Should I just put those 2 in the fridge, or is the steam leaking out OK when canning?
] then it was a bum seal anyway). If too much liquid has boiled off and the tops of produce is sticking out above the waterline so to speak, I'd suggest using those jars first as the protruding parts can discolor and get kind of funny as time passes.
