Storing Carrots and Beets in Louisiana??

Hi, everyone! I'm a newbie here, found out about this lovely place from BYC. I'm hoping someone could help me figure out how to store my delish carrots and beets. I'm in south Louisiana and our temperatures change like crazy. I doubt we'd be able to build a root cellar and of course we have no basements but I do have a spare fridge outside that works. Any tips on how to keep our veggies from going to waste? Thanks in advance!

Do you can? You could freeze them.

I have a cellar that is made of cement blocks that stays nice and cool in the summer and pretty decent in the winter (not an underground cellar). I keep it dark and store potatoes and onions in there with no problem. I am in WV though. I can my carrots with water and a little salt. I do pickled beets.
