Tomato question

I am in the process of canning the Romas that have finally come in and the recipe says add lemon juice to the jars. Can I use vinegar instead? I woul think so- they are both acid. I think for the finished product I would prefer the vinegar taste to lemon.

How much vinegar compares to lemon juice?

Yes, you can -- however honestly I find the taste of a Tbsp or so of lemon juice to be *less* noticeable with the tomato flavor than vinegar is. Personal choice, though.

Now I know why the recipe says start with 45 pounds of tomatoes though! I am going with sauced tomatoes instead of whole and boy, do they cook down. I think I am going to get a quart of paste:/

I think I am going to freeze tomatoes until I can do a bigger batch next time.

you can use citric acid, they sell it in the powdered form, and sell it with the canning supplies. People say it has no taste. I use the lemon also and don't notice it at all!
