twist on stuffed bell peppers

1 pkg. Sweet Italian sausage
1 fresh tomato * I used an ox heart
Asiago rinds I have been saving since NY ; chopped & probably 1/4 c total
1/2 jar marinated artichokes; chopped
a bit of onion (might have been 1/4 cup)
About 1 cup of croutons
Parm and feta cheese crumbles
Browned up the sausage into small crumbles. Added the onion, tomato, and artichokes as it was cooking. Crunched the croutons slightly and added to the mixture along with the rinds.
Baked approximately 10 minute on 350. Sprinkled feta and parm and heated another few minutes to melt.
**I like my peppers al dente and not mush; hence the short cooking time in the oven.
** Lloyd has some garlic toast and some herb pasta

best peppers i have ever had......... made a pig of myself .....

I miss my mothers stuffed peppers. Every time I see them on a menu I order hoping they will be like moms never happens. Marinated artichokes nice touch !!!
