Up to my eyeballs in carrots!

I love raw carrots, but because it got ridiculously hot a few weeks ago, the flavor doesn't seem to be what it usually is. Any good carrot recipes that you can suggest? I usually toss them in soups & stir fries, so I'm looking for something different than that.

glaze them (maple syrup carrots are really good just glaze with butter and maple syrup)
curry them (carrots are awesome in curries)
toss them in smoothies
make a cooked puree and use in any dessert you like pumpkin in

make some pot pies with lots of carrots and freeze them

let us know what you end up doing ...mine are right around the corner I just thinned the baby ones out and cooked them yesterday
it is going to get hot I hope they do not loose this wonderful sweetness

Hi there!

I like carrots cooked with fresh orange juice, butter & chives (& sometimes fresh thyme). They are delicious -- just simmer them slowly until cooked. I've even cooked them that way in the microwave (not as tasty but fast & we all need that sometimes).

Carrot cake uses at least one pound. Iced with lemon cream cheese icing...yumm...

My carrots are always kinda lousy. Never get very big. I usually eat them raw with ranch dressing.

My carrots seem to come out as tiny little match sticks! So my daughter and I ate the WHOLE harvest to ourselves in one night with ranch dressing and it was over. :/

I TOTALLY vote for carrot cake!!!!!!!!

Sure wish I had luck with carrots, I may give it another shot. Ya think there is time to do them for a fall crop? Never tried growing them then.
