To be honest I never questioned the oil in the peppers. The gal I got the recipe from said to put it in so I always have. You could try it without the oil. I see no problem.
I put a few cloves of garlic in my pickled eggs also. Makes them might tasty. John

I like to slice up the peppers and remove the seeds. I tried canning whole but you can't get many in the jar. I pack the jars full. John
