I have grown a couple of different types of garlic. Haven't pick a favorite yet. I have Metechi, Northern white, Inchelium Red, Spanish Rojo and Amish Paste. Amish Paste didn't do well at all and I am using everything I harvested for seed. I also order Martin's Heirloom which didn't produce at all for me this year. I cooked a pizza yesterday and added thinly sliced garlic on top, Metechi to be precise. I have tasted it raw and thought it to be mild but yesterday it had a real bite to it.
So here is my question, what is your favorite garlic and why do you like it (ie. hot, spicy mild, roasts well). I know this is really too subjective to really tell but I have never know what type of garlic I am eating, I just bought it at the store. I did like the Metechi but was surprised yesterday. Is it because I baked it or why was it hot yesterday? Was it not cured enough?
