When would be the correct time to plant onion seeds for South Texas?

I am in zone 8b and would like to try onions. Most of what I have read seems to indicate that onions do better from seed. So do I plant them now or wait until early spring?

This will be my first attempt at onions. I'm hoping it works out, I'm going to try and grow all my own ingredients for salsa this year. Last year I only grew the tomatoes. This year I'm going to grow the tomatillas, jalapenos, onions, garlic and cilantro (and of course the tomatoes).

Also, does anyone recommend any onion varieties? It gets very hot here during the summer and not too cold in the winter (but I do have several nights in the mid to high 20s but it never stays cold long).

Any help appreciated.
