White eggplant, not a clue

We had room on the raised deck for one more plant container, so I went to Agway to purchase an eggplant. The very last plant they had was labeled white, so I thought: I don't care what color the skin is.
I expected a normal looking eggplant, but these are more like a carrot. By the time they are peeled there will be nothing left to eat. We have no clue as to how to prepare these, or, even if it is even worth trying.

thou they are thin marinate and grill them, a good pot of Ragu and garlic bread or make a crisp..

they are supposed to be less bitter than the purple. you could slice them at an angle and use they for eggplant parmigiana.

Thanks, I'll pass that on to the chief cook and bottle washer. I take it that you don't peel them, but eat the skin also.
