will cherries (specifically chokecherries) ripen further after picking

The chokecherries are getting towards ripe but not there yet -- red to turning purplish -- but in past years the birds have et them all before I could pick any for jam.

Could I pick them now and ripen them the last bit of the way in the kitchen?

Or do cherries not do that. (which is my vague general impression but am hoping to be wrong :p)

I had never seen a choke cherry tree before moving to Montana and when I got there I asked what they were and they told me. I also asked if they were edible (like in general) and the lady to me no it was posion.

I must go hunt for chokechery jelly/jam now. Seeing as how I never tasted and it won't grow here.

Not poisonous unless you eat large quantities of unripe fruits and/or pits.

Does take a considerable amount of sugar to make a palatable jelly though :)

So, semi-bump here, anyone know whether cherries will keep ripening after picking?

It seems that store bought cherries do ripen a little on the counter- but they also encourage fruit flies and rot... So, I am going to guess "no". What about covering the trees? Is it too big to put netting over?
