Fried potatoes

I've been baking sweet potato "fries" in the oven, tossed in the oven and seasoned, laid out flat on a cookie sheet. They're good, but they don't come out crispy like regular fries. I think I'll try dredging and deep-frying them next. Not exactly as healthy though.
do you dredge them in oil or fat of some kind first? I have baked them in the oven without any oil and they are just soggy. the fat helps

When I make oven fries from potatoes I preheat my iron griddle in a 425 degree oven, then swirl the potato slices in a bowl with oil ( I use a high heat oil, like avocado or grapeseed ) add seasonings, then dump them on the hot pan. It makes a wonderful sizzle! Then I bake them for 15 or 20 minutes until crispy on the outside but still tender inside.

Yes. I'm not real sure about the exact amount of time, you have to keep an eye on them so they don't get too brown, and flip them about half way through.
Sorry about the vagueness, my cooking tends to be kind of elastic. :p

LOL, I said "tossed in the oven", I meant to say tossed in butter! EVOO is good too.
