"Bean beans"...that's what we call them here too. :D

My cupboard is quite bare at the moment as we've used up most of last year's goodies. It is a very insecure feeling for me when the canning shelf is empty!

We got the 9 roosters done yesterday and my neighbors came down and we taught them how to do it. They have some old roos driving them nuts. We all decided that they should bring theirs down when we do our old hens this fall. You really can't mess up a tough old roo, so that will be a good learning experience for them. ;) She asked me about learning to can too. I think I will take them a jar or two of chicken stock after I get some made this week.

I think just about my favorite thing to can is dried beans. We eat them so often since I started canning them, rather than making them one pot at a time. Something about pressure canning them that takes the "blow" out of them and they taste better too. I like to do up chickpeas by the quart too, then I can easily whip up a quick batch of hummus whenever I get the craving.

love home canned green beans can eat a quart by myself and the dw makes a great green and yellow bean casserole.....

Major, that's something we call slumgulleon...just a family expression for putting all the spare veggies from the garden into a big ol' iron skillet, cooking them down and thickening them with cornmeal. Then we usually put that mix over pasta, rice, taters or biscuits to make a meal.

When we can it, we don't add the cornmeal as it can cause it to taste a little bitter for some reason, so we add it later when we use the slum. This particular batch had sweet and hot banana peppers, bell peppers, onions, tomatoes, sweet corn, yellow squash and chives. Sometimes we add new taters to it also but I opted to not do that this time. It's a most delicious medley of garden goodness!

Mary, they were already gone, much to my dismay. Folks usually snap up free animals around here for one reason or other...some to eat them, some to sell them later on. There were 5 free ducks in the last edition and they were gone in a millisecond. Would have LOVED to get those into a jar! :drool
