I cannot find my Ball Blue book. I need to make room in the freezer and start freezing fruit juice. I have watched videos of juice being canned. Can you just take blackberry or cherry or raspberry or elderberry juice and boil it and put in hot jars and put in water batch canner or does it have to have something else done to it?

My Consumer Guide Joy of Canning, Freezing, and Preserving (the one I use for a lot of stuff) says bring it to a simmer, leave 1/2" air gap, and water bath for 10 minutes, quarts or pints.

So all berries would be the same, blackberry or elderberry or even cherry? They are acid enough? I have been looking at videos and that is what I am finding out and just wanted to make sure.
