i have one of the Foxfire books that describes what some people did when they had a pig to process and what they did with the head. i can't imagine what it would be like to have to cut a head in half... i'm pretty glad i don't ever have to deal with that!

i have one of the Foxfire books that describes what some people did when they had a pig to process and what they did with the head. i can't imagine what it would be like to have to cut a head in half... i'm pretty glad i don't ever have to deal with that!

My Grandmother made hog head cheese, also called souse. She also made scrapple. Basically, you boil the head (cleaned-no eyeballs or brains, sometimes skinned) pick the meat off the bones and return it to the broth. Pour it into loaf pans and refrigerate it. Slice and serve when cold and broth has jelled. For scrapple, same thing but when you put the meat back in the broth, you add cornmeal and cook it. Pour in a loaf pan, chill, slice and fry in a skillet. I'm going to try the scrapple.

@Nyboy, the hams were "fresh" not cured. So I had the processor cut 4 ham steaks out of each ham and grind the rest for sausage.

We had 90 pounds of meat in our friends freezer, no way to fit it into ours. A friend in Livingston offered us a small chest freezer last week when we were down there. We were in the car, not the truck, so we didn't get it.

But what to do with this meat? We decided to give it to a couple that we have been friends with for years. We gave them the freezer that we couldn't pick up, as well, since they didn't have one. They were thrilled beyond words. We were blessed with all this meat, we made a darn good deal on it. We have plenty, so why not share the wealth. They got the freezer yesterday, took it home, cleaned it up and plugged it in.

They came up today, we had lunch and visited. I had cooked some of the pan sausage this morning and they ate some of it. I cooked a pork roast for our lunch and they loved it. They couldn't believe that we were just giving them the meat. We packed their meat into their ice chests and they went home.

We thank God for all our blessings. He gives us so much.

It is quite easy to cut the pig head in half leangthwise with a butcher saw. You can also cut / chop it in half with a meat cleaver or even an axe. I make head cheese out of the head, pig feet, and any left over meat on the bones.

i've heard of scrapple and souse before. never had either of them but would try them. :)

and i'm glad you found a good home for the extra meat. it's nice when a plan comes together...

So whaddaya do on a cold day? Sit outside and smoke bacon! It's normally DH's job, the manly thing and all that. But he is sick with the crud and I won't let him outside to play. I bought some apple wood chips, gonna compare it to the hickory we used last time.
