Tried roasting tomatoes!!!

I haven't collected enough tomatoes for canning quite yet- but I did have the perfect amount to try roasting them! Thanks for the great idea, Pat! While I was making more cucumber relish (boy, I need to think of a lot of things to use that with!) I had the tomatoes in the oven roasting. We will have it tonight for dinner! Very simple and tastes great. Yum!

Oh that's awesome lesa! Roasted tomatoes are also perfect for pasta sauces! I think it would give traditional pasta dishes a more robust and bolder flavor! Let us know how it works for you! :)

i also recall Grandma talking about drying tomatoes in the sun before using them in sauces which does thicken the sauce and make the flavor more intense. they'd use old sheets.

I think you can only do that with paste/plum type tomatoes. Other tomatoes have too much water, and will mold before they dry.

Also don't do it with green when ripe tomatoes (even paste ones) Green tomatoes cook down to a very unappetizing shade of olive khaki. Save your greens for raw products, like salsa.

Thank you so much for your welcome! Yep, it's alright. :) For me, I mostly have herbs, but I don't have a green thumb, so I am a bit worried about starting on fruits and vegetables. It gets me so frustrated and sad when my plants die/don't bloom. :(

LOL yup olive khaki doesn't look too tasty!
