dw and i picked down the sad little garden, ended up with a full bucket of highlander peppers. so decided to roast and freeze them

Highlander Hot chile peppers range 1,000-1,500 SHU on the Scoville scale. An Anaheim hybrid. I looked it up, was not familiar with them. Anaheim I'm familiar with.

My first thought is a pizza topping.

Skin them, roll them up in wax paper, and freeze them. Unroll the wax paper and peel them off individually. Put what you don't use back in the freezer in a zip-loc bag.

Or freeze them on a cookie sheet (probably on wax paper so you can peel them off). You should be able to pull out individual peppers.
