Canning is my obsession. Forget buying any other books. There are TONS of free recipes online. If you are going to be doing green beans and things in just water and salt you need a pressure canner.

I will tell you that I am using stevia in conjunction with honey. I agree that it is too intense! But with agave or honey it gives that extra sweet kick I miss in my attempt to give up refined sugar.
My thought would be to do some easy ones like

So I want to grow a bunch of stevia this year for working with.
Anyone have growing tips and processing tips? I'm going to keep some dry just for teas, but I would like to get it so I can use it in baking and my raw food.

You can cut it back lots and lots, however, remember that the main leader will get very thick. You can always prune it back very hard and let all the base shoots come up. Dry your clippings for food or leave a sprig in your car to dry out before tossing. It is a fabulous deodorizer.:D

You know I've had roses all winter? They never open fully because the rain matts them, but they keep throwing up new buds just the same. You have made me so anxious to get out and scour the grounds for signs of life.

They are a thistle! My biggest advice is don't over baby them. Start them in pots indoors. Transplant after danger of frost in a sunny, well drained location. I throw a handful of fishmeal in the hole. Leave them alone. Water when dry after established. Letting them dry out pushes flowers...
My packets of seeds were in a hat box...until recently...
...I moved them to a little plastic tote...that had a bunch of other seeds...and I stacked it next to the box that came in the mail...with the other seeds...
Now our BIG batches of seeds--the seed crops we've grown--are in 5 gallon...
Have you done this with less sugar? I'm definitely trying this. Our family has already polished of 16 qts of pickles, but we do dills.
