Most of the recipes I'm seeing call for strawberries-- I know they go well together, but it's not strawberry season here yet!!! I'll see if I can find something with just the rhubarb!
My rhubarb is huge, and I've never cooked with it.

Yup. Remember, you can plant them deep-- as deep as just below the first "real" leaves-- if you can't dig that deep, then you can almost like them sideways, then up-- kind of like an L shape to plant. They'll grow roots on the long stalk.
