    sheets on the tomatoes tonight

I've got dozens of canning jars sitting ready and waiting for my San Marsanos and golden roma tomatoes and am gnawing my fingernails down to the quick worrying about the summer temps not lasting long enough for them all to ripen. :barnie We are forcasted for low to mid 80s daytime and high 50s...

I need a good recipe for cannable tomato sauce using...

I think the only reason to deskin is due to texture references in the final product. I've canned tomatoes both ways without problems. In fact, I make it a practice to include some skin-intact tomatoes in my canned salsa for added texture. I use about a 70:30 ratio of deskinned to skin-intact...

    Crab Apple Recipes

Here are recipes from my latest favorite freeze/can-anything-on-earth cookbook. I've never tried these myself, but sounds good, if you like crab apples that is. ROSY CRAB APPLE PIE 1 c. sugar 1 T. flour 1/4 tsp. salt 6 c. finely chopped, unpeeled crab apples Pastry for a 2-crust pie 1 tsp...

    Freezing baked cobblers ????

In my handy-dandy freeze just about anything imaginable book it says to: "freeze the filling in the pan that you'll be baking in. After its frozen, remove from pan, wrap and put back in the freezer. It'll keep well for 3-4 months. When you're ready to use, remove from freezer, place into...

Gave my thyme plant a butch cut.

I recently gave my English thyme plant which has been flowering the last week or two and is nearly 5 times the size it was when I planted it in late April a really short butch cut. I tied up the trimmed off stems into 5 big bunches and hung them upside down from an old shower caddy. I hung...

    Anyone ever make tomato juice?

Grow4, that sounds like a lot of fun for DS. I used to do similar tasks for my mom when I was otherwise too young to "help" much in the kitchen. Of course, she always double checked the cleanliness of my hands first as I was otherwise known to be often outside making "mud and dandilion"...

What did you can (freeze, dehydrate, preserve) today?

OK, that 25 lbs of green beans turned into 20 qts. of canned green beans and 5 gl. bags of frozen. NOTE TO SELF: never buy that many green beans again! :P I also canned 6 pints of salsa from my first good tomato harvest. Sorry, I'm a REALLY bad photographer.

What did you can (freeze, dehydrate, preserve) today?

I cheated! Since my pole beans mostly got eaten up by critters, I went to my local farm stand and purchased 25 lbs. of green beans to can. I got them all trimmed and cut ready for canning tomorrow. Hope I've got enough empty jars for the beans and my soon to be bumper roma tomato crop. I...

    HARVESTING SQUASH

I accidentally grew some acorn squash one year (compost pile volunteer) and got 3 nice sized squashes on the vine. I waited until the first frost, which succeeded in killing off the vines good, and then picked them.

    Digging potatoes

Although I've never actually grown any spuds myself, I grew up in Oregon's potato capital(Klamath Basin) and know that they don't pull them up until the plants die, usually just after the first frost. I worked the potato sheds in the end of October and up until just before Thanksgiving usually...

? re saving Anaheim pepper seeds

Unfortunately, whilst I was otherwise engaged (zonked out from another sleepless night due to extreem pain) my DS roasted all the peppers and peeled them. So, I'll have to snag some straight from the bush to get them for the seeds, but that'll be at least a few more days. I'll let you know...

Where did all the lightning bugs (fireflies) go this summer?

NEVER seen one before myself. Of course, I live in the PNW and you'd not expect to ever see one here.

For those of you who make chili rellenos

Do you serve any kind of sauce over them? My dad, when he had the restaraunt, put some kind of sauce over them and I can't remember exactly what it was. It definately wasn't salsa or tomatillo sauce either. Inquiring minds want to know.

? re saving Anaheim pepper seeds

We have a lot of Anaheim peppers and I want to save seeds from them, both for someone here and for myself. My question is, since we roast the peppers to peel them, will this "kill" the seeds? I usually char them either on the outdoor grill or under the broiler, put them in a bowl, cover them...

    sling for melons

I can't wait for the pics of your undies in the garden holding up your melons. :lau I just propped my melons on top of an upturned empty flower pot. The vines themselves spill out over a metal garbage can that's been cut in half, thusly corraling the roots and dirt. I did my watermelons the...

My romas are starting to come in

My son and I picked enough golden roma tomatoes to can about 2-3 quarts whole today and about 6 of my San Marsano toms too. WOW, those San Marsano toms are 3 times the size of any other roma tomato I've ever seen. :clap I'm gonna have to cut them up just to get them into a quart canning jar...

What did you can (freeze, dehydrate, preserve) today?

I cut up and froze (in three seperate canning jars) yellow bell peppers, orange bell peppers and red bell peppers. I also saved the seeds from these store-bought peppers as my own fizzled out really early in the season, producing 2 dudds that just dried up about halfway through maturing. By...

    A picklin perdicamint

I'd for sure store in the refrigertor until you get more gas to process them, just to be on the safe side. It sure couldn't hurt em any. However, be sure to bring the jars up to temp BEFORE dropping in the hot water bath (as me how I know this). ;)
