Best time of year to pull up fruit tree seedlings and replant?

I was wondering my moms neighbor has various nice looking fruit trees on his farm with seedlings coming up around them. Mom said he is very nice and would probably let me pull as many as I like. I was wondering if there is a "best time of year" to pull them and replant so I will know when to ask him if I can have a few.

I did this in the spring, early on with a japanese maple and some blueberry bushes. Anything I've ever done this to in summer has DIED on me. If you can't wait until spring, try to wait until fall when it cools because growth will have slowed and the bush/tree will go into dormancy over the winter so it will come back strong in the spring.
