as mentioned earlier we are doing applewood smoked boston butts this year....
trimmed all the excess fat off them

inoculated them with a north carolina vinegar based vaccine <lexington style>

whos next for their flu shot? ........don't worry it's a clean needle truth me

after multiple shots in the butt,we here use a <south carolina mustard based rub> to sooth the injection points... nothing like a mustard pack.

to keep any infection away, we use the finest cheesecloth to cover their bo bo

a few patients here at the clinic need to be double warped for safety reasons.

and put into a cool room for the public safety....for 18 hours...

yes s.c. style does add a wonderful unique flavor we like it on bl/sl chicken thighs....
plus the mustard rub makes some of the best tasting bark...
