I have a ton of small onions that I would love to can, but I just dont have a recipe that is ONLY for onions!
I found a recipe for peppers that is with vinegar, salt, and garlic (pretty basic) and I would love to do something like that with my onions, but I just dont know what recipe to follow!
Anyone have any advice!!??
Thank you!

Are they little pearl onions or just regular onions that didn't make it to a good size? I've never canned onions just by themselves, but I imagine they'd need pressure canned, unless you're pickling them. If you are just looking to use them up, maybe do up some salsa? Salsa takes a lot of onion.

They are little pearl onions and so cute :) I've already done salsa and would love to have these cute little onions for some "appetizer onions".

Here's one that sounds good to me. I love anything with a touch of horseradish to it...

And this one, it's a little fancier...

Or this one, basic, but had good clear info on how to do it...

I've got a bunch of Egyptian walking onions that would be good for this, but not nearly enough to do a whole batch. That's a lot of onions it calls for!

Don't forget- onions freeze great....
My freezer is cram packed right now...I even did my first try at canning spinach because I didnt have room for it in the freezer. I was a little nervous because Ive heard "greens" are the most "dangerous" to can, but I sanitized everything very well and followed all the steps exactly so it should be fine.
