Canning Pickled Eggplant

Ive been reading some recipes on pickled eggplant and would love to give it a try, but some recipes call for as little as 15 minutes in a water bath canner and other recipes say I need to use a pressure canner???
Also the vinegar to water ratio?? Some recipes say 2parts water to 1 part vinegar and other recipes say no water at all and use all vinegar??
I dont want to ruin a bunch of eggplant, or worse poison my family.
Any advice?
