NyBoy, your dinner substitution reminded me of my one-time plan to make corned beef.
No. I planned to "corn" the beef ... yeah, they call it "corned" because of the salt. We call it "rock" salt but corn salt sounds more appropriate to me. After I had the brisket, crock and salt - I decided that the potassium nitrate (saltpeter) didn't sound too appropriate.
So there I was ... I decided to make pastrami! It was okay but this was back in my low-Kultur daze and I finally decided that I just wasn't up to this pickle- and kraut-, and etc. making!
chicken is right! As @ducks4you says it is SO EASY. By the package with spice packet, place in roasting pan with water (follow package directions) bake until tender. Easy Peasey. You must try it, it really is non-fail unless you do not cook long enough.
I find that I LOVE it when I boil a point and a flat together in a big pot of water with all the spice packets. Simmer for about 4-5 hours and then take the meat out and add the potatoes and carrots and celery into that same water! YUM!
the flat portion is the way to go.. it's leaner.and not 2 different types of meat <point and flat> with a bunch of fat in it
now this is just my 2 cents worth on cooking corn beef.
slow and low...............
purchase the biggest crock pot you can find 8 quart +..
place the flat and spices and just a hint of water in the crock pot set it on low, let it slimmer all day.
once home it's ready, but wait....
now's the time for a couple tweaks...
make up ahead of time a mixture of Dijon mustard and honey. leave it at room temperature.
once the corn beef ready pull it out and turn the oven to broil...
now is the time have a quart of chicken broth simmering add the the potatoes simmer them for 30 min's and the cabbage the last 15 min's.
while wait for the oven trim any fat off the top of the corn beef and smear the mustard/ honey mixture over over the top in it.
with the rack low, place the corn beef into the oven keep an eye on it once it has a great caramelized look to it, pull it and let it rest..
now the veggies <simmered in this order> carrots, potatoes , cabbage are done...
