oh for sure, same here, like one example from the past where we were normally growing sweet-100s cherry tomatoes. they tasted sweet and good out of hand and for fresh eating but when i took some of them and juiced them for canning they had very little other flavor going for them and i didn't make that mistake again. i would though at times include them in other batches of the beefsteak tomatoes to give them a bit of a sweetness boost but it usually wasn't anything i'd notice. then we decided to not grow cherry tomatoes any more because we couldn't eat them all and it was more work and took up space that i'd rather use for regular tomato plants instead.
